Raw Rice Cake (Gluten Free)

Ingredients
1 cup of rice (soaked)
4 eggs
3/4 cup of oil
1+1/2 cup of Greek yogurt
50g of coconut
50g of parmesan cheese
1 tablespoon of yeast
1+1/2 cup of brown sugar

Preparation
Place the rice in a sieve, let it drain and set aside.

In a blender, add the sugar, oil, yogurt, coconut and eggs and mix.

Gradually add the drained rice with the blender running.

Blend for 10 minutes and add the cheese.

Blend a little more and finally add the yeast and blend a little more.

After everything is well blended, there will be some grains in the middle of the mixture, as if it were crystal sugar.

Grease a large baking tin with a hole in the centre and pour in the mixture. Bake for approximately 40 minutes until cooked.

Suggestion: Serve with fruit and Greek yogurt, or for those with a sweet tooth, a chocolate topping =)
