Goat Koftas with Apricot Sauce by Chef Chakall

Ingredients
500g ground beef
2 leeks
2 tablespoons Caçarola Basmati Rice (pre-cooked)
2 eggs
1/2 tsp fresh coriander
75g butter
1 tablespoon of olive oil
4 tablespoons of flour and oil to taste for frying the koftas

For the Sauce:
150g apricots
5 cloves of garlic
1 teaspoon ground coriander
1 tablespoon of olive oil
Toasted pine nuts to taste;

Preparation
To make the Koftas:
This dish is ideal for using up leftover meat from a roast. In a container, mix all the ingredients and shape them into balls. Coat in flour and fry in oil.

For the sauce:
Clean the apricots and fry them with the garlic cloves, coriander powder and olive oil. Then grind everything.

Serve the Koftas hot and drizzle with the sauce and finish with toasted pine nuts.

Suggestion: You can also serve the Koftas with our Basmati Rice Caçarola.
